The founding family is thus committed to a strict separation between the logistics headquarters and the operational management on-site, ensuring consistent brand quality as the number of locations increases.

The transition from an owner-operated chain of stores to a standardized franchise system requires profound adjustments to the internal company structures. While the Gargiulo brothers, with their southern Italian roots, have primarily been responsible for the culinary authenticity and operational management of the existing stores, Bernhard Kloucek contributes the necessary expertise for defining franchise processes and contractual structures. A key aspect of the expansion strategy is the diversification of the offered location models. To respond to varying property availability, customer traffic, and regional market conditions, three flexible operating concepts were developed, which have already proven successful in ongoing in-house operations. The spectrum ranges from large-scale flagship restaurants to compact express concepts for urban areas.
The Napolino by L'Autentico format was designed for high-traffic locations in city centers or shopping malls. This model focuses primarily on the high-margin takeaway and delivery business and, due to reduced seating capacity, requires significantly less floor space, thus minimizing rental and setup costs for franchisees. In contrast, there is the classic premium concept, which operates as a full-service restaurant with a high-quality ambiance and comprehensive service. The format portfolio is complemented by seasonal pop-up solutions, such as those the company has successfully implemented for years at the Summerstage on the Danube Canal in Vienna. This flexibility allows the franchisor to appeal to both established restaurateurs and career changers, as well as multi-unit franchisees who wish to develop several locations simultaneously.
Centralized production as a guarantee for standardization and quality
The biggest challenge in scaling upscale restaurant concepts lies in maintaining consistent product quality. Neapolitan pizza traditionally adheres to strict criteria regarding dough preparation, proofing time, and baking temperature. To eliminate variations caused by human factors at individual locations, L'Autentico operates a central production facility.
In this factory, pizza dough is produced centrally according to standardized recipes, portioned, and delivered to the individual branches under controlled conditions. This centralized supply of goods results in significant economic and operational advantages for the franchise partners: The space required in individual branches decreases, as there is no need for extensive dough cooling rooms or heavy kneading machines. Furthermore, the need for highly qualified kitchen staff is reduced, since the critical dough-making process is already completed. The standardization of ingredients and seamless quality control in central production guarantee that customers at every future location in western Austria or neighboring countries will be offered exactly the same taste experience as at the flagship store in Vienna.
Historical development and current market presence
The expansion builds on over thirteen years of market experience. Since opening its first restaurant in 2013 in Vienna's 19th district, the company has grown steadily. In addition to its flagship location in the upscale Döbling district, the current portfolio includes further urban locations on Schottenfeldgasse in the seventh district and on Türkenstraße in the ninth district. There are also branches in large shopping centers such as Millennium City in Vienna and Westfield Shopping City Süd in Lower Austria, as well as the standalone Napolino concept in Vienna's city center.
Through this strategic positioning, the company has firmly established itself in both the traditional evening dining market and the lunchtime and shopping tourism sectors.
